Crema di Funghi à la Vapiano

When I go to Vapiano this dish is what I’m going for every single time. For those of you who don’t know Vapiano: It’s a german food chain which offers Italian food, especially pizza, pasta and salads. I love “Crema di Funghi” so much that I observed the cook, or rather the “Vapianisti” (how they like to call themselves), how he cooks it! This is a step-by-step recipe on how to prepare this dish. You will need (2 portions): 250 g of champignons/mushrooms, 200 g of crème fraîche (when possible mushroom-flavored, it makes the dish even more intense!), 100 ml white wine (Chardonnay works best for me because it intensifies the taste), 300-350 g noodles, parmesan, spices (pepper, salt), chili peppers, oil First you have to make sure that you wash and peel the mushrooms. Meanwhile put some water in a pot to boil.
